Split Pea Soup

As the temperatures plummet here in the Tennessee Valley and across the Southeast, there are not many things more comforting and warming than a big bowl of soup. This Split Pea Soup recipe is really easy to make and is very filling. Paired with a grilled cheese sandwich, it's the perfect meal for lunch or dinner. I hope that you enjoy it as much as I did! Split Pea Soup

Prep Time: 8-10 minutes                                                          Cook Time: 2 hours
Difficulty: Easy                                                                             Yields: 4-6 servings
 
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely chopped
  • 2 ribs of celery with leaves, finely chopped
  • 3 cloves garlic, finely minced
  • 1/8 teaspoon red pepper flakes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 6 cups water
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 1/2 cups dry split peas
  • 1/4 cup finely chopped Italian parsley
  • 1/4 cup heavy cream

Preparation Instructions:
 
In a large Dutch oven, heat the olive oil and butter over medium heat. Sauté the onion and celery in the melted oil and butter until they are tender (about 6-7 minutes). Add the garlic, pepper flakes, basil and rosemary to the pot and continue to cook for an additional minute. Be careful not to burn the garlic. 
 
Next, add the water, salt, pepper,  and peas to the pot and bring to a boil. Reduce the heat to medium low. Cover the pot and allow it to simmer for two hours, stirring occasionally. As the peas cook, they will fall apart and form a thick stew.
 
Once the peas have cooked for 2 hours, check for seasoning. Add salt and pepper if needed. Add the chopped parsley to the pot and stir. Using an immersion (stick) blender, blend the soup until it is a homogenous mixture and smooth. Once this is finished, stir in the heavy cream.
 
Serve warm with a dollop of sour cream, croutons or grilled cheese sandwich, if desired. Enjoy!
