Spaghetti with Meat Sauce

There is something so special about comfort foods. Whether it's fried chicken, macaroni & cheese, meatloaf or spaghetti with meat sauce, these foods make us feel so good. There are usually memories attached to each of these foods too. Every time I make spaghetti, I think of my late Auntie Lynn who thought that spaghetti had to be cooked at least 3 to 4 times a week. While I don't make this recipe nearly as many times as she did, I certainly feel good and comforted when I do. I hope that you enjoy this recipe as much as I did! Buon Appetito!
 

 
SPAGHETTI WITH MEAT SAUCE
Yields 6-8 servings
 
Ingredients:
  • 1 pound ground chuck/round
  • 1 pound Italian sausage
  • 1 (8 ounce) package of Baby Bellas mushrooms, sliced
  • 1 large onion, chopped
  • 2 stalks of celery, finely chopped
  • 5 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 1 (28 ounce) can crushed tomatoes
  • 2 tablespoons granulated sugar
  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 2 bay leaves
  • 2 teaspoons freshly chopped Italian parsley
  • Kosher salt and ground black pepper to taste
  • 1 pound dry thin spaghetti, cooked according to package instructions
Instructions:
  • In a large saucepan or Dutch oven, cook beef and sausage over medium-high heat until browned, about five minutes. Add onions, mushrooms, and celery to the pan and continue to cook for an additional five minutes. Stir in minced garlic until fragrant--about 1 minute.
  • Stir in tomato paste and cook for 1 minute making sure to coat the meat and vegetables. Next, add the crushed tomatoes, sugar, dried herbs, garlic powder, red pepper flakes, 1 teaspoon kosher salt and 1 teaspoon ground black pepper. Reduce cooking temperature to medium-low heat. Cover and simmer for 45 minutes to 1 hour, stirring occasionally.
  • After the cooking time has elapsed, make sure to check the salt and pepper for seasoning and add more if necessary. Stir in the freshly chopped Italian parsley. Discard bay leaves before serving over prepared spaghetti noodles.
