The Ultimate Chocolate Chip Cookie
One of my culinary weaknesses is a perfect chocolate chip cookie. I don't mean anything fancy or with walnuts, marshmallow or peanut butter added either! A perfect chocolate chip cookie is crisp on the outside, but absolutely chewy on the outside. I have tested probably 35 different recipes over the years and finally came up with what I think, is the ULTIMATE CHOCOLATE CHIP COOKIE! I am sure that you will agree!

The Ultimate Chocolate Chip Cookie
Prep Time: 5 to 10 minutes Cook Time: 9 minutes per batchDifficulty: Easy Yields: 3 dozen
Ingredients:
- 3/4 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened to room temperature
- 1/3 cup vegetable shortening
- 1 1/2 teaspoon pure vanilla extract
- 1 large egg, room temperature
- 1 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet Ghiradelli© chocolate chip morsels
Preparation Instructions:
Preheat oven to 375°. Line two ungreased cookie sheets with parchment paper. Set aside.
In a bowl of an electric mixer fitted with the paddle attachment, cream the brown sugar, granulated sugar, butter and shortening until light and fluffy. Next, add the vanilla extract and egg to the bowl and blend well.
After this is done, add the flour, baking soda, and salt and mix until well combined. Using a rubber spatula, stir in the chocolate chip morsels.
Using a medium sized ice-cream scoop, place the mounds of cookie dough on prepared cookie sheets leaving a two-inch space between each cookie.
Bake cookies at 375° for exactly 9 minutes. DO NOT OVERBAKE!
Cool for 1 minute on the cookie sheet and then transfer to a cooling rack for an additional 5 minutes (if they last that long!). Enjoy!
